Canonization

To be considered Canon in the New Testament, a book had to have been written by an apostle. It was generally assumed that, while Mark was not an apostle, he wrote on behalf of Simon Peter. Likewise, although Luke was not an apostle, it was generally assumed he wrote on behalf of Paul / Saul of Tarsus.

Just because the 4th gospel was authored by John doesn't mean it was entirely written by him. John was a poor fisherman and may have actually been illiterate. Also there are stories that predate his calling, such as Cana of Galilee. These would likely have been contributed by others, not John himself.

This is just my theory, and I am not claiming it is by any means authoritative. However, Eusebius of Caesarea and Polycarp both wrote that Papias of Hierapolis was a disciple of John. Hierapolis is not very far from Ephesus, where it is believed John spent his remaining days after returning from exile on Patmos.
